As we approach the holiday season you know what that means: Trader Joes pumpkin bread!!! If you're anything like me then you love to bake but can't be super trusted to make stuff from scratch unless its a VERY exact recipe haha. So what do you do? Go to Trader Joe's and buy the box mixed because since its Trader Joe's it's basically homemade right? Definitely.
This week I picked up some of the gluten-free Trader Joes pumpkin bread mix and baked some in the lounge. Now I could try to be super cool and food-blogger-y and tell y'all the ingredients and how I mixed it and all that but umm it's literally right there on the box sooo you can just follow that haha.
But as I was making the pumpkin bread, slowly more and more people from the 7th floor started congregating in the lounge because they could smell something cooking from when they got off the elevator. It was a Friday afternoon filled with last minute homework assignments and rushing to finish before the Halloween weekend began. I knew that I needed an escape from the ever-growing pile of assignments looming over me, so I felt what everyone else was inevitably feeling too. Once it finally finished baking, people came in and out of the lounge to grab some and it was honestly just so nice to see people and make them a little bit more happy on the Friday of a stressful week!

So if you are ever in need of a break from the constant stress of the world, take some time to release your inner child and make a holiday treat from a box mix! Seriously it's so nostalgic and calming and happy!! OH! And don't forget to add chocolate chips for a little extra fun haha!
